Sweet Potato Pie 3 medium size sweet potatoes Peel, then boil potatoes until tender. Cool and slice. Line a pie pan with pastry and bake until ALMOST, but not quite done. Bring other ingredients to rolling boil, until mixture makes syrup. Place layer of sweet potatoes in bottom of pastry, cover with half the syrup. Place remaining potatoes on top of this and cover with rest of syrup. Bake in hot 375 degree oven for 30 minutes. note: You can mash the sweet potatoes for a more pumpkin-like pie. Serves five.
