Indian Tacos
 

2 pounds of roasted beef or pork
1 cup pinto beans
1 cup white hominy
red chili powder
dash salt
cheese, shredded
lettuce, shredded
onion diced
tomato diced
one dozen flour or corn tortilla shells

Slice roasted meat into small pieces and set aside. Mash up one cup each pinto beans and white hominy. Add red chili powder and salt to taste. Put layer of meat in a flour or corn tortilla shell, add thin layer of pinto-hominy mixture, top with cheese. Lettuce, tomato and onion garnish is optional. I believe this is the best tasting taco you'll ever eat. Makes twelve.
